Just made 

a breakfast casserole for the week including diced celery, carrots, broccoli, onion, green bell pepper, soy chorizo, and egg whites. Currently baking some potatoes to chop up with it, along with a corn tortilla or two. I will now be starting my day with all of the nutrients my diet is usually missing. So so excited for when it comes out of the oven! I’ll try to post a picture when it’s done :D
